It’s hard to find an iconic Appalachian dish without a few “maters” in it. Tomatoes were and still are a staple in Appalachian home gardens, and families frequently included them in summer meals when the vegetable (or fruit, depending on your stance) harvests in the warm summer months. Southern tomato pie is one of several regional dishes that has been beloved for many years.
